Vegan Mashed Potatoes 
With Kale

Ingredients
  • 3 pounds of potatoes
  • ½ tablespoon olive oil
  • 3 cloves of garlic-minced and chopped
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 2 cups of kale, stems removed

Preparation

  1. Bring a large pot of water to a boil.
  2. Wash potatoes-if they are large cut them in half.
  3. Place the potatoes in the pot and let the water return to a boil.
  4. Cook the potatoes until tender, about 20-25 minutes.
  5. Meanwhile, in a skillet over medium heat, put ½ tablespoon of oil. When hot, add garlic; cook for 1-2 minutes until fragrant-be careful not to burn it.
  6. Add the kale to the skillet; stir. Cook until the kale is wilted, then remove from heat.
  7. When the potatoes are tender, drain the pot and place the potatoes in a large bowl.  Mash the potatoes with either a mixer or potato masher. Stop at your desired consistency.
  8. Add 2 tablespoons oil, kale, salt, and, pepper; stir until fully mixed together.

    Tips
    I burned the garlic the first time I made this recipe so be very attentive and watch it closely while cooking, because it is easy to overcook.
