Vegan Mashed Potatoes
With Kale

Ingredients
- 3 pounds of potatoes
- ½ tablespoon olive oil
- 3 cloves of garlic-minced and chopped
- 1 ½ teaspoons salt
- ½ teaspoon pepper
- 2 cups of kale, stems removed
Preparation
- Bring a large pot of water to a boil.
- Wash potatoes-if they are large cut them in half.
- Place the potatoes in the pot and let the water return to a boil.
- Cook the potatoes until tender, about 20-25 minutes.
- Meanwhile, in a skillet over medium heat, put ½ tablespoon of oil. When hot, add garlic; cook for 1-2 minutes until fragrant-be careful not to burn it.
- Add the kale to the skillet; stir. Cook until the kale is wilted, then remove from heat.
- When the potatoes are tender, drain the pot and place the potatoes in a large bowl. Mash the potatoes with either a mixer or potato masher. Stop at your desired consistency.
- Add 2 tablespoons oil, kale, salt, and, pepper; stir until fully mixed together.TipsI burned the garlic the first time I made this recipe so be very attentive and watch it closely while cooking, because it is easy to overcook.
