Spinach Artichoke Quesadillas
VEGAN-DAIRY FREE-NO ADDED SUGAR

Ingredients

  • ½ tsp. Olive oil
  • 1 garlic clove diced
  • 6 oz. marinated artichoke hearts diced
  • 3 cups baby spinach
  • 4 oz. vegan cream cheese
  • 2 tbsp. Vegan mayo
  • Salt and pepper for enhanced taste
  • 2 large flour tortillas

Preparation

  1. Heat olive oil in a pan over medium heat
  2. Add garlic and cook for up to 1 minute, stir frequently making sure not to burn
  3. Add artichoke hearts and 2 cups of baby spinach, stir and cook until spinach begins to wilt.
  4. Add cream cheese, mayo, salt, and pepper into the pan and stir together
  5. Place over a non stick pan on the stove over medium-high heat.
  6. Place 1 tortilla in the pan and fill with half of the mixture and an additional half cup of baby spinach (keep mixture on one half of the tortilla)
  7. Fold tortilla in half and cook until bottom begins to brown, then flip it and wait for the next side to brown.
  8. Repeat with remaining ingredients.
