No Added Sugar Banana Bread

Ingredients

  1. 6 over-ripe bananas peeled and sliced thickly

  2. ¼ cup canola oil or vegetable oil
  3. 2 whole eggs
  4. 1 tablespoon vanilla extract
  5. 2 cups flour
  6. ¾ teaspoon baking soda
  7. ½ tablespoon salt

Preparation

  1. Preheat oven to 400
  2. Combine bananas on a baking sheet lined with parchment paper and roast for 15-20 minutes until they start to carmelize.
  3. Let them cool completely and then mash.
  4. Reduce heat to 325, grease an 8x4 inch loaf pan and set aside.
  5. In a bowl whisk together the oil, eggs, vanilla, and roasted bananas (and their leftover juices).
  6. Sift in the flour, baking soda and salt.
  7. Stir all ingredients together.
  8. Pour the batter into the prepared pan and back at 325 for 1 hour, or until toothpick comes out clean.
  9. Make sure loaf is completely cool before slicing.
