No Added Sugar Banana Bread
Ingredients
6 over-ripe bananas peeled and sliced thickly
- ¼ cup canola oil or vegetable oil
- 2 whole eggs
- 1 tablespoon vanilla extract
- 2 cups flour
- ¾ teaspoon baking soda
- ½ tablespoon salt
Preparation
- Preheat oven to 400
- Combine bananas on a baking sheet lined with parchment paper and roast for 15-20 minutes until they start to carmelize.
- Let them cool completely and then mash.
- Reduce heat to 325, grease an 8x4 inch loaf pan and set aside.
- In a bowl whisk together the oil, eggs, vanilla, and roasted bananas (and their leftover juices).
- Sift in the flour, baking soda and salt.
- Stir all ingredients together.
- Pour the batter into the prepared pan and back at 325 for 1 hour, or until toothpick comes out clean.
- Make sure loaf is completely cool before slicing.
