Recipe 2-Roasted Cauliflower

RECIPE
Roasted Cauliflower and Rice
Ready in 30 minutes
Serves 2 people

Ingredients

  • A ½  head of cauliflower
  • 2 tablespoons of maple syrup
  • 2 tablespoons of sriracha
  • 1 cup of brown rice or quinoa

Preparation

  1. Start cooking your brown rice or quinoa (or a mixture of both)
  2. Preheat oven to 400 degrees
  3. Cut the cauliflower into thinly sliced chunks
  4. In a mixing bowl combine the cauliflower with the siracha and maple syrup
  5. Lay out the cauliflower onto parchment paper on a baking sheet, making it as evenly spaced out as possible
  6. Cook for about 20 minutes or until tender
  7. Combine your grain and cauliflower in a bowl
  8. Enjoy!

Tips

The thinner the cauliflower is sliced, the faster it will cook so be careful not to burn it.
