Roasted Cauliflower and Rice
Roasted Cauliflower and Rice
Ready in 30 minutes
Serves 2 people
Ingredients
- A ½ head of cauliflower
- 2 tablespoons of maple syrup
- 2 tablespoons of sriracha
- 1 cup of brown rice or quinoa
Preparation
- Start cooking your brown rice or quinoa (or a mixture of both)
- Preheat oven to 400 degrees
- Cut the cauliflower into thinly sliced chunks
- In a mixing bowl combine the cauliflower with the siracha and maple syrup
- Lay out the cauliflower onto parchment paper on a baking sheet, making it as evenly spaced out as possible
- Cook for about 20 minutes or until tender
- Combine your grain and cauliflower in a bowl
- Enjoy!
Tips
The thinner the cauliflower is sliced, the faster it will cook so be careful not to burn it.
